Cupcakes and Comedy



Last weekend the women in our Missional Community decided to make it a Girl's Night and attend a local church's Comedy and Cupcakes event. 


Great Comedy from Anita Renfroe and delicious cupcakes from Lux Bakery and Cafe here in Austin. I had a key lime cupcake and it was amazing!



Great night with a wonderful group of women, we had time for a little fellowship and prayer afterwards. Great way to send Saturday night.

Foodie Friday

Nothing exciting...but I did make it. Last night was all about the soup and grilled cheese sandwiches. Now I decided this a little late and hubs gave me a questioning glance and asked if I really wanted to mess with grilled cheese? This is where my shear genius steps in. We have been together for 8.5 years and every once in a while we still surprise each other.

I told Hubs, "mess with grilled cheese?" I'll have this ready in 3 minutes! He just laughs and shakes his head a little {this is where my handy toaster steps in}. I have a regular ol' toaster, nothing fancy. I clean the crumb tryand place it on its side, one side gets regular bread and the other bread with a slice of yummy Havarti with dill cheese on top. Normal setting, and in under a minute. I'm putting the plain piece on the cheese piece and Voila! Grilled cheese and I didn't even have to use butter! It was delicious, I have no idea where I learned this trick, but it works like a charm. Soup was boring but still my fav, Chicken noodle from Campbells. I think he was really suprised that I knew how to do such magically things with the toaster.

Blah Blah....
Now I didn' craft this week because I had so many orders to finish and get in the mail. YAY for orders! I have a fun craft coming up that I ordered the pieces for and can't wait for them to come it...hint..think letterpress.

I'm working on what to do for Hubs for Valentines. I have a gift idea and am working on the handmade part to it, because every gift should have something handmade.

Foodie Friday

I did it, week 1 and I cooked dinner twice! Saturday night I cooked a great dinner with my mom. Green chili casserole, it was tasty. Some how I made it through the entire cooking process and didn't take 1 picture.

Sunday night I had a second chance. We went for something easy since there were so many of us and decided on Taco Stack.

Heres what you'll need:

2 lbs ground turkey (or beef)
2 cans tomato sauce
1 can pinto beans
1 can kidney beans
1 can classic Rotel
1 packet of taco seasoning
1 packet of ranch dressing seasoning

additional you will need:

Fritos
Lettece (shredded)
tomatos (chopped)
black olives (sliced)
Sweet coconut (shredded)
salsa
avacado (sliced)
chesse (shredded)
sour cream
cooked rice
Walnuts


Brown the ground turkey and drain any additional grease off. Rinse meat with warm water and place in stock pot with first set of ingrediants. Allow to cook for 30 minutes on low-medium heat.


We cheated and used mom's awesome rice cooker. 15 minutes and you are ready to serve. I love this thing!





Places additional ingrediants in individual bowls in serving area.


 
Fritos, rice and bean/meat mixture are placed in bowls first and then can be topped with additional ingrediants to each persons preferences.

Great food for family gatherings and larger groups. What was for dinner at your house this week?
